When I saw this recipe in my mother-in-law’s recipe book, there was no doubt in my mind I needed to bake this! The ingredients and instructions ares so super easy.
You could probably add some kind of cocoa/coffee flavored glaze on top, but honestly this cake is SO moist and rich with flavor I opted to sprinkle confectioner’s sugar once the cake cooled down.
I indulged in one generous slice (for pictures, alright?) and gave the rest to my husband to take to the office. It was a huge hit! The cake box returned home empty.
1 yellow cake mix (I used Pillsbury)
6 oz. dry instant chocolate pudding mix
3/4C water
1/4C vodka
1/2C sugar
1C oil
4 eggs
1/2C Kahlua coffee liqueur
Heat oven to 350 degrees Fahrenheit. Mix the ingredients with an electric mixer for 1 minute on low speed, then 4 minutes on medium speed. Pour batter into a greased and floured bundt pan. Fills a 15 cup bundt pan or 2 smaller ones. Bake 60 to 70 minutes. Cover pans with aluminum foil for the last half hour or so.
